Goji Berry Ice Cream!

Weather you just want a tasty treat, or you want to get your kids to eat something healthier, ice cream is always nice.  Especially when it is loaded with extremely healthy Goji Berries!

To start making your Goji Berry ice cream you will need 2 cups of milk, 1 teaspoon of vanilla paste, red or pink sea salt, 4 egg yolks, ¼ of a cup of cachaca, 4 oz of semi sweet chocolate, 1/3 cup of cocoa, ½ cup of Goji Berries, 1 cup of heavy cream and ½ cup of sugar.

Once you have all of these ingredients put aside, you are ready to start.

First, pick out a reasonably small bowl.  Soak the Goji Berries in the Cachaca.  Place these berries off to the side.  While you are waiting, pick out a large pot (over medium heat), and mix together ¼ cup of sugar, the cream and milk.  Wait until the mixture is about to start boiling, most likely 2-3 minutes.  While this is happening, you can also mix ¼ of a cup of sugar and egg yolks until it looks yellow and creamy (over medium heat again, in a large pot).  This should take about 2 minutes.  Add the cream mixture to the egg mixture, and mix in the cocoa and vanilla paste.  Also, mix in a pinch of sea salt.  Cook!  Stir every minute or two for approximately 8 minutes.  Now, drain the Goji Berries, and mix them and the chocolate chips in.  Allow this all to cool on the counter, and then place in the fridge until it is completely cooled.  Next, pour this into an ice cream maker.  You have now made homemade ice cream!  Taste it, it is going to be delicious.

If ice cream isn’t enough, you can always make popsicles!

To make Goji Berry Popsicles, you’ll need 8 ounces of Goji Juice, 3 ounces of gelatin (or your favorite flavor Jell-O for extra flavor).  You can add 1 packet of Kool Aid for extra flavor as well.  Don’t forget 1 cup of granulated sugar, and 2 quarts of water.  To start, boil the water.  As it is boiling, drop in each of the mentioned ingredients.  Now, pour this into paper cups, and wait until the ingredients start to thicken.  Once they start to thicken, you can put them in the freezer.  Remove them later, and enjoy a delicious treat.

By following the above recipies, you can teach your children that eating healthy can still be fun and tasty.  Not only will these help teach your kids a valuable lesson, but it will also attempt to replace some not so healthy snacks they may also consume.
